Just preheat your oven to 350 degrees, and you’ll be ready to go in no time. 

You’ll need about 12 large leaves of phyllo dough (or 24 smaller leaves), 1/2 pound ground pork, 1/4 cup finely chopped onion, 2 tablespoons finely chopped fresh parsley, 3 tablespoons grated Parmesan cheese, salt and pepper to taste. For the sauces: Add 2 tablespoons BBQ sauce or ketchup (or both) to 8 ounces light sour cream or Greek yogurt. You could also try adding some feta cheese crumbles and chopped fresh herbs as well.

The filling is best when mixed by hand rather than using a food processor. Roll up each sheet of phyllo dough into an 18-inch-long log, then cut it into one-inch slices on an angle to create individual servings. Place the strips side by side on baking sheets lined with parchment paper, spacing them evenly apart so that there’s enough room between each strip for spreading out during cooking. 

In the middle of each strip place one tablespoon of filling before rolling up and placing seam down on a baking sheet. Fill all 12 pieces or 24 pieces depending on how many you want. Brush lightly with butter then bake until golden brown, about 15 minutes for small ones or 20 minutes for larger ones. Serve hot and enjoy.

Bring to a boil then reduce heat to low and simmer for 20 minutes or until vegetables are tender. 

Add 2 cans (14 ounces each) drained white beans and 1 bunch chopped kale to pot; simmer for 10 minutes or until kale is wilted. Remove from heat and discard bay leaves. Let cool for 15 minutes before pureeing in batches in a blender or food processor until smooth. 

Stir back into the pot along with 4 tablespoons of cornstarch mixed into 1⁄2 cup cold water, stirring until thickened. Season with additional salt and pepper if desired. Top individual bowls of soup with pieces of cooked sausage roll, shredded cheese, minced parsley, grated parmesan cheese, croutons or crispy fried sage leaves if desired. Makes 6 servings

  1. Start by preheating your oven to 350 degrees.
  2. Then, in a large skillet, cook the pork sausage over medium-high heat until it’s browned all over.
  3. Once the sausage is cooked, remove it from the skillet and let it drain on a paper towel-lined plate.

  5. Add the drained sausage back into the skillet, along with the frozen puff pastry and eggs.
  6. Mix everything together well, then spoon the mixture into individual muffin cups lined with parchment paper. 7. Bake them for 15 minutes or until they’ve puffed up and are golden brown. 
  7. Allow them to cool for 10 minutes before removing them from the pan. 
  8. Serve warm with ketchup, mustard, or mayonnaise!

  1. Preheat the oven to 375 degrees F.
  2. Cut pork sausage into small pieces and roast in the oven for about 15 minutes, or until lightly browned.
  3. Remove from the oven and let cool before handling.
